If you haven’t seen my steamed bun post, you might want to start there first 😉 If you already know how to make steam buns or buy the dough locally, full STEAM ahead! Yuk Yuk Yuk I know. I can’t resist a corny joke, especially if there is a pun involved.
Peanut oil is my best friend here! You can use canola or some other kind (preferably not olive oil, the taste would be a bit weird) but peanut is the best for the flavor!
Cabbage and green onions, maybe don’t mix them like I did here though, it’s harder to unmix them and I like to cook the onions in with the meat then add the cabbage.
So I start with any kind of ground meat and green onions, a little of that peanut oil and add some soy sauce for exactly the same reason!
When it’s nice and brown, add cabbage so it gets cooked but stays a little bit crunchy. If you want it all of the way soft you can just cook it a little longer, but I find that the flavor and texture are better when it’s still a bit crisp
Time to get out our dough, now that the filling is cooling. This dough I made yesterday so it’s nice and fresh and read to go.
You can cut it as big as you want, but I find that using my recipe makes about 8 decent sized buns
You want to work the dough as little as possible, but get it nice and flat. No weak spots, it needs to be even or the filling may push through the outside when you close it or when it steams. They do puff out when they’re cooked so they’ll be thicker than you think!
Put about 2 Tbsp of filling inside each bun, however much you want but not so much that you can’t easily close it. You can find a lot of videos online about how to make them into little pouches but I’ve found it’s easier and works just as well if you make them into little pies!
Push the filling in as you’re closing the wrapper, all methods agree on that and it definitely makes a difference.
See? A nice little pie! Now just pop it in the steamer for 10-15 minutes and
