These are one of Mr Mom and Toddlers FAVORITES. I make them for Thanksgiving sure, but they’re not limited to that in our house. They’ll get broken out any time of the year we (they) get to jonesing for them. Especially if I have homemade marshmallows to top them with!
Canned sweet potatoes, so awesome. I could use fresh and I have, but these make the process super quick and easy and honestly sometimes it can be hard to FIND sweet potatoes. So for this round we’ll use 2 Lbs of canned, but you could easily substitute fresh if you weigh them out and boil them so they’re nice and soft.
Butter, the hallmark of any good dish
Melted with a half a cup of brown sugar this is probably at least a small part of why the boys like them so much 😉
Mix those up
And dump them on top of the sweet potatoes. Have I mentioned how much I love recipes that just involve dumping stuff in a dish and making delicious come out?
If you use ‘normal’ marshmallows yours won’t look quite this chaotic before it goes in the oven, but I wanted to use my homemade ones (one batch makes a LOT) and besides once they bake they get all melty and
