One of my all time favorite snacks is Tostitos Tortilla Chips, Hint of Lime, 13 Oz (affiliate link) and my own Pico De Gallo. It’s my go to when I want fresh and crunchy all at once so I usually try to have some made in the fridge, besides which, it’s amazing on burrito’s and enchiladas and tacos and pretty much anything else except for sandwiches. I don’t think it would be great on a sandwich, but I’d love it if somebody wanted to prove me wrong on that! Maybe like a bruchetta-ey version on focaccia with mozzarella and fresh basil… my mouth is watering!!!
We start with a whole onion, a nice fresh white one
My trusty Norpro Stainless Steel Onion Holder! Perfect for chopping onions up into teensy little pieces
A bunch of roma tomatoes; you can use regular tomatoes if you like I just prefer Roma. If you use Hot House or some larger tomatoes you probably won’t need as many of them.
I use everything but that yucky little stem part at the top. It drives me bonkers when I get Pico at a restaurant and those bits are in there! GRRR!

Toss together with the onions, you can use more or less of either depending on how you like it
A nice big bunch of fresh cilantro, de-stemmed and
Chopped all up. I have a pair of Herb Scissors that I use sometimes but when it comes to Cilantro I’d rather chop it up with a knife, those little leaves are really sticky!
Mix that cilantro in with the tomatoes and onions
Slice it up
And juice it right into the bowl! You can squeeze it too, if you’re super strong.
You can see the pulp and juice all on top there mmmm
And Mix em up again. You want all of that limey juiceyness on every bite!
There’s no point in fighting it. Eat it right away it’s delicious!
Pico De Gallo Salsa
- 1 Onion Chopped
- 10-12 Roma Tomatoes Diced
- 1/2 Cup Cilantro Chopped
- 1 Lime Juiced
- Salt to taste
Dice onion and tomato and add to bowl, mix
Chop cilantro and mix into onion and tomato
Juice lime into the bowl on top of the vegetables and mix again
Add salt to taste, Enjoy!
Pico De Gallo is my absolute favorite salsa but it’s so good for so many other things too! What will you use it for? I’d love to hear more ideas (so I can eat more of it) in the comments below!
